Blini: The Pancakes of Russia

By Max Dudkin    08.01.23

In America, a common breakfast and dessert are pancakes. In Russia, it is the same way; except that it is called blini (блины). It is also common for Russian people to shout “Blin (Блин)!” when something goes wrong: making it basically the Russian version of “Damn!” However, I do not know why.

Anyways, compared to thick American pancakes, Russian pancakes are very thin: allowing you to put any type of filling inside and wrapping it. I usually put blueberry jam and sour cream inside. The sweetness of the jam and the sourness of the sour cream mixed together really compliments the dish. But people also put more savory fillings inside as well, such as caviar. The process to make blini is also much more difficult compared to pancakes. You need to hold a heavy iron pan to make the shape of the blini and top of that, it can burn very easily: possibly due to how thin blini is.
