Dominicans like to make big, humongous pots of Habichuelas con Dulce and here’s the recipe…
Habichuelas con dulce is basically a sweet bean liquid dessert from of course the Dominican Republic, and it is especially very popular around Easter time. It shouldn't need to be said, but more than 11 million of us Dominicans can not agree on the exact same recipe for Habichuelas con Dulce. It all depends on your style and how sweet you want it to taste.
<h3>INGREDIENTS</h3>- 4 cups boiled red kidney beans
- 6 cup water from boiling the beans
- 2 cups coconut milk
- 3 cups evaporated milk
- ½ teaspoons salt
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 cinnamon sticks
- 10 cloves
- ½ pound sweet potato, cut into small cubes
- ½ cup raisins
- 2 teaspoons butter
- 1 cup milk cookies
Blending: Place the beans (and water in which they boiled) in a blender. Strain the beans to get rid of the skins and anything undissolved.
Boiling: Pour the beans, coconut milk, evaporated milk, salt, sugar, vanilla, cinnamon, cloves, and sweet potatoes into a pot. Simmer over very low heat until the sweet potatoes are cooked through. Stir regularly to avoid sticking. Remove the cinnamon sticks and cloves.
Serving: Put cookies in the beans when you serve.
